Pasta and Vegetable Alfredo
After I retired, a friend of mine asked if I would like to cook occasionally for a friend of hers who hates to cook. Even though I didn't know her friend, I agreed to do it. At the time, I didn't realize that she wanted most of the dishes I prepared to be vegan. I did a lot of research so I would do everything properly. Of the dishes I make for her, this is her favorite.
Ingredients
8 ounces chick pea penne pasta, cooked
Vegan Alfredo Sauce
2 cups broccoli florets
1 1/2 cups carrots, sliced thin
1 cup shredded plant based mozzarella cheese
Directions
Steam baby spinach for 2 minutes. Drain off any water.
Steam brocolli and carrots for 5 minutes. Drain off any water.
Place pasta in a 13 x 9 baking dish. Add spinach, broccoli, and carrots to pasta. Mix.
Add alfredo sauce to pasta and vegetables. Sprinkle cheese on top of pasta.
Bake at 375 for 30 minutes.
