Taco Pasta
This is a low fat recipe that is full of flavor and can be as mild or hot as you like by selecting mild, medium, or hot diced tomatoes and pico de gallo.
Ingredients
1 tablespoon olive oil
1 small onion, chopped
2 teaspoons minced garlic
2 teaspoons ground cumin
10 ounces diced tomatoes with green chiles
2 1/2 cups water
8 ounces penne, uncooked
12 ounces cooked chicken breast
6 ounces pico de gallo
1 cup shredded taco cheese
Directions
In a large saute pan, over medium heat, add oil. add onions, garlic, and cumin to pan. Cook for 5 minutes, stirring frequently.
Add diced tomatoes and water to pan. Mix well. Cook for 5 minutes. Add pasta to pan. Cover and cook for 12 minutes.
Add chicken and pico de gallo to pan. Mix well. Cook for 5 minutes.
Top each serving with 1/4 cup cheese.
