Sausage and Pepper Baked Ziti
Baked ziti was a favorite when I was growing up. I frequently ordered itwhen we went out for dinner. I wanted to create a version with one of my adult favories, sausage and peppers. The spicy sausage and the creamy ricotta cheese are a wonderful combination which result in a very tasty baked ziti.
Ingredients
12 ounces penne, cooked
1 pound Italian sausage
1 small sweet onion, chopped
2 red peppers, cut into bite size pieces
2 green peppers, cut into bite size pieces
28 ounces crushed tomatoes
1 teaspoon salt
1 teaspoon granulated garlic
1 tablespoon Italian herb mix
16 ounces ricotta cheese
2 cups shredded mozzarella cheese
Directions
In a 5 quart sauce pan, over medium heat, add Italian sausage, onions, and peppers. Cook for 10 - 15 minutes, stirring frequently, breaking meat up with a spoon, until meat is browned and peppers are soft.
Add tomatoes, salt, pepper, and garlic to pan. Mix well. Reduce heat to medium low and cook for 20 minutes.
Add ziti to pan. Mix well. Remove from heat and cool for 15 minutes.
Add ricotta cheese to pan. Mix until ricotta cheese is completely mixed with the pasta mixture. Place in a 13 x 9 baking dish. Sprinkle the mozzarella cheese on top. Bake a 350 for 30 minutes.
