Meat Lasagna Rollups
When I was working, I would make lunch for my staff every couple of months. One time they asked for lasagna. It would have been tough to serve traditional lasagna in an office environment, so a made lasagna rollups. This was one of their favorite lunches.
Ingredients
1 small onion, chopped
1 pound lean ground beef
1 pound ground italian sausage
32 ounces ricotta cheese
1/2 cup grated parmesan cheese1 teaspoon salt1/2 teaspoon pepper1 teaspoon granulated garlic
1 tablespoon Italian herb mix
12 lasagna noodles, cooked according to package directions
1 cup shredded mozzarella cheese
28 ounces of your favorite spaghetti sauce
Directions
In a large saute pan, over medium heat, add ground beef, ground sausage and onions. Cook, breaking up with a spoon, until meat is browned and crumbled. Remove from heat and let cool for 15 minutes.
Add ricotta cheese, parmesan cheese, salt, pepper, garlic, and Italian herb mix to meat mixture. Mix until cheese is completely blended with meat.
Spread 1/12 of meat and cheese mixture onto each lasagna noodle, leaving 1 inch uncovered at the end. Roll lasagna noodle towards the uncovered end. Place rollups in a 13 x 9 baking dish.
Pour spaghetti sauce over rollups, making sure all are completely covered. Srpinkle mozzarella cheese on top.
Bake at 350 for 20 minutes.
