Creamy Linguica and Pepper Pasta
I created this recipe on my drive home to make dinner. The planned dinner wasn't thrilling me, even though it is one of my favorites. I usually don't use jar sauce but for this recipe it really works. Everyone loved this recipe and it will definitely become part of our regular line up.
Ingredients
1 pound penne, cooked
1 pound linguica, cut into bite size pieces
1 small sweet onion, chopped
2 red peppers, cut into bite size pieces
6 ounces tomato paste
6 ounces water
15 ounce jar alfredo sauce
12 ounces milk
Directions
In a 5 quart sauce pan, over medium heat add linguica, onions, and peppers. Cook for 10 - 15 minutes, stirring frequently, until linguica is browned and peppers are soft.
Add tomato paste and water to pan. Mix well. Reduce heat to medium low and cook for 10 minutes.
Add alfredo sauce and milk to pan. Mix well. Cook for 5 minutes.
Add pasta to pan. Mix until pasta is completely coated with sauce. Cook for 10 minutes
