Chili Macaroni and Cheese
We were watching a cooking show and the chef made Chili Macaroni and Cheese. I have made both chili and macaroni and cheese more times than I can count but had never thought about combining them. I made a very light cheese sauce with an mild chili and combined them. It was a very delicious meal.
Ingredients
1 small onion, chopped1 pound ground beef
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons chili powder
2 teaspoons cumin
15 1/2 ounces diced tomatoes
15 1/2 ounces black beans, rinsed and drained
1 1/2 cups milk
8 ounces cheddar cheese
8 ounces Velveeta, cut into cubes
8 ounces elbow macaroni, cooked according to package directions
Directions
In a large saucepan, over medium heat, add onion and ground beef . Cook for 10 minutes, breaking meat up with a spoon, until meat is cooked and crumbled.
Add salt, pepper, chili powder, and cumin. Mix well. Cook for 5 minutes. Add tomatoes and black beans. Reduce heat to medium low and cook for 1 hour.
In a medium saucepan, over medium low heat, add milk. Shred cheddar cheese. Add cheddar cheese and Velveeta to milk. Mix well. Cook for 10 minutes or until cheese is completely melted, stirring frequently.
Add cooked macaroni and cheese sauce to chili. Mix well. Cook on medium low for 15 minutes.
