Chicken Spinach and Arichoke Lasagna
Ingredients
6 tablespoons butter4 tablespoons flour4 cups milk2 teaspoons salt1 teaspoon pepper1 cup roasted red peppers, cut into 1 inch strips14 ounces quartered artichoke hearts8 ounces baby spinach1 pound cooked chicken breast, cut into bite size pieces12 lasagna noodles 2 lbs ricotta cheese2 cups shredded mozzarella cheese1 cup grated parmesan cheese
Directions
In a large saucepan, over medium heat, melt butter. Add flour and stir with a wisk until butter and flour are completely blended and smooth. Cook for 1 minute. Add milk, salt and pepper. Stir with wisk until flour mixture is completely blended. Reduced heat to medium low and cook for 5 minutes. Sauce should start to thicken. Reserve 1 ½ cups sauce for later use.
To remaining sauce, add roasted red peppers, artichoke hearts and spinach. Mix well and cook for 5 minutes. Reduce heat to low.
Spread 3/4 cup of meat sauce in the bottom of a 13 x 9 baking dish. Spread sauce so it covers the bottom of the pan.
Cook lasagna noodles, according to package directions minus 2 minutes.
Place 4 lasagna noodles in bottom of 13 x 9 pan. Cover with half of the sauce. Place ½ of cooked chicken breast over sauce. Spread ½ of ricotta cheese over chicken. Sprinkle with ½ cup mozzarella and ¼ cup parmesan.
Place 4 lasagna noodles on top of cheese. Cover with remaining half of the sauce. Place remaining cooked chicken breast over sauce. Spread remaining ricotta cheese over chicken. Sprinkle with ½ cup mozzarella and ¼ cup parmesan.
Place 4 lasagna noodles on top of cheese. Cover with reserved sauce. Sprinkle 1 cup mozzarella and ½ cup parmesan on top.
Bake at 350 for 45 minutes. Let stand for at least 30 minutes before cutting it into squares.
