Baked Penne
Ingredients
8 ounces penne, cooked
1 pound ground beef
1 red pepper, chopped
1 small sweet onion, chopped
1 teaspoon salt
1 teaspoon minced garlic
28 ounces crushed tomatoes
1 tablespoon Italian herb mix
16 ounces ricotta cheese
8 ounces fresh mozzarella
Directions
In a 5 quart sauce pan, over medium heat, add ground beef, onions, and peppers. Cook for 10 - 15 minutes, stirring frequently, breaking meat up with a spoon, until meat is browned and peppers are soft.
Add tomatoes, salt, pepper, and garlic to pan. Mix well. Cook for 5 minutes. Reduce heat to medium low and cook, covered, for 20 minutes.
Add penne to pan. Mix well. Remove from heat and cool for 15 minutes.
Add ricotta cheese to pan. Mix until ricotta cheese is completely mixed with the pasta mixture. Place in a 13 x 9 baking dish. Slice mozzarella into 8 slices. Place slices on top of penne. Bake a 350 for 30 - 40 minutes.
