Baked Macaroni and Cheese
My step-son and his family love macaroni and cheese. It is included in many family special occasions. The grandchildren still prefer the box mac and cheese but hopefully they will transition to homemade when they are a little older.
Ingredients
8 ounces elbow macaroni, uncooked
4 tablespoons butter
4 tablespoons flour1/2 teaspoon salt1/2 teaspoon pepper1 tablespoon mustard
2 cups milk
8 ounces cheddar cheese, shredded
8 ounces muenster cheese, shredded
1/2 cup panko bread crumbs
1/2 cup grated parmesan cheese
Directions
Cook macaroni according to package directions. Drain. Rinse with cold water. Place in a large bowl and set aside.
In a large saucepan, over medium heat, melt butter. Add flour, salt, and pepper. Stir with a whisk until flour is completely mixed with butter. Cook for 5 minutes, stirring frequently. Add mustard and mix well.
Add milk. Stir with a whisk and cook for 5 - 10 minutes, stirring frequently, until sauce starts to thicken.
Reduce heat to medium low, add cheese, and stir. Cook for 5 - 10 minutes, until cheese is completely melted and sauce is smooth. Pour sauce over macaroni and mix until macaroni is complete coated.
Place macaroni and cheese in a 13 x 9 baking dish.
In a small bowl add bread crumbs and parmesan cheese. Mix well. Sprinkle over the macaroni and cheese.
Bake at 375 for 30 minutes.
