Turkey Spinach Meatballs
A friend of mine wanted meatballs but she wanted something a little different. I thought about many options but since she is dieting so I decided spinach would be perfect. She loved them. You could also make them with ground beef of meatloaf mix.
Ingredients
1 egg
.7 ounce Italian dressing mix
1 tablespoon water
3/4 cup panko breadcrumbs
10 ounces frozen chopped spinach, thawed
1 pound ground turkey
Directions
In a large bowl, add egg, Italian dressing mix and water. Mix well. Add breadcrumbs and stir until breadcrumbs are completely moistened. Let stand for 5 minutes.
Squeeze water from spinach. Add spinach to breadcrumb mixture. Add turkey to breadcrumb mixture. Mix with your hands until breadcrumbs are completely incorporated into turkey and spinach. Roll meat mixture into 1 1/2 inch meatballs.
Place meatballs on a baking sheet. Bake at 375 for 25 minutes.
Add meatballs to your favorite sauce.
