Sweet and Sour Spam
Five or six time a year I would make lunch for my staff. Each lunch had a theme to it so one time they asked if I could make a Hawaiian lunch. I did a lot of research to come up with a menu and found that spam was very popular. This is the recipe I made and even though I do not like spam, they loved it.
Ingredients
2 cans Spam, cut into cubes1 green pepper, cut into bite size pieces
1 small onion, chopped
1 tablespoon vegetable oil
20 ounces pineapple chunks
3 tablespoons cornstarch
2 tablespoons rice wine vinegar2 tablespoons soy sauce2 tablespoons ketchup1/2 cup brown sugar
2 cups pineapple juice
Directions
Heat oil, in a large sauce pan, over medium high heat. Add Spam, peppers, and onions. Cook for 8 minutes, stirring frequently. Add pineapple chunks, including liquid, to pan. Mix well. Cook for 5 minutes.
In a bowl, add cornstarch rice wine vinegar, soy sauce, ketchup, brown sugar, and pineapple juice. Mix well. Add to Spam mixture. Mix well. Reduce heat to medium low. Cook for 30 minutes.
