Sloppy Joe Casserole
Sloppy Joes are a great sandwich loaded with vegetables and seasoning. They are even better the next day. I thought the might be even better in a casserole with macaroni and shredded cheese. The casserole was fabulous and while great for times when you would rather have a meal than a sandwich. I served it with a side salad so we had even more veggies.
Ingredients
8 ounces elbow macaroni, uncooked
1 tablespoon vegetable oil1 red pepper, chopped
2 celery stalks, chopped
1 sweet onion, chopped
1 carrot, chopped
1 pound lean ground beef
15 1/2 ounces fire roasted diced tomatoes1 teaspoon salt1 teaspoon pepper1 teaspoon granulated garlic
1 tablespoon Worchestershire sauce
1 tablespoon spicy brown mustard
1/2 cup chili sauce
2 cups shredded monterey jack cheese
Directions
Cook macaroni according to package directions. Drain. Rinse with cold water. Set aside.
In a large sauce pan, over medium heat, heat oil. Add red peppers, celery, onions and carrots. Cook for 10 minutes or until vegetables are soft.
Add ground beef and cook, breaking up with a spoon until browned and crumbled.
Add tomatoes, salt, pepper, garlic, Worcestershire sauce, mustard, and chili sauce to ground beef. Reduce heat to medium low and cook for 15 minutes.
Add macaroni to ground beef, mix until macaroni is complete coated. Cook for 10 minutes.
Place the contents of the pan into a 13 x 9 baking dish. Sprinkle monterey jack cheese on top. Bake ar 350 for 30 minutes.
