Sausage Meatballs with Couscous
This recipe was inspired by a recipe I saw cooked on TV. I changed it up to include vegetables and a combination of sweet and hot sausage. You can use any combination of sausage that you prefer.
Ingredients
1 egg
1/2 teaspoon salt
1/2 teaspoon garlic powder
2 teaspoons Italian seasoning
1 tablespoon water
1 cup panko breadcrumbs
2/3 pound ground sweet Italian sausage
1/3 pound ground hot Italian sausage
2 bell peppers, chopped
1 onion, chopped
28 ounces crushed tomatoes
1 tablespoon Italian seasoning
2 teaspoons garlic powder
1 cup couscous
Directions
In a large bowl, add egg, salt, garlic powder, and water. Mix well. Add breadcrumbs and stir until breadcrumbs are completely moistened. Let stand for 5 minutes.
Add sausage to breadcrumb mixture. Mix with your hands until breadcrumbs are completely incorporated into meat. Roll meat mixture into 1 1/2 inch meatballs.
Place meatballs on a baking sheet. Bake at 375 for 25 minutes.
In a large saute pan, over medium low heat, add peppers, onions, meatballs, crushed tomatoes, Italian seasoning, and garlic powder. Stir until tomatoes coat peppers, onions, and meatlballs. Cook for 30 minutes. reduce heat to low and simmer, covered, for 2 hours.
Remove meatballs from pan. Increase heat to medium. Add 1/2 cup water and couscous to pan. Mix well. Cook covered for 5 minutes. Place coucous in a serving bowl. Top with meatballs.
