Kielbasa and Cabbage
This is a great one dish meal that is easy to prepare and is also good as leftovers. It is a little high in fat so I don't make it very often. If you wanted to cut down on the fat you can use chicken sausage.
Ingredients
1 small onion, chopped
2 pounds baby yellow potatoes, cut into bite size pieces
2 pounds kielbasa, cut into 1/4" slices
1/2 head cabbage
1/2 teaspoon seasoned salt
1/2 teaspoon pepper
Directions
In a large saute pan, over medium heat, add onion, potatoes and kielbasa. Cook for 30 minutes, stirring every 5 minutes. Everything should be browned and potatoes cooked through.
Remove core from cabbage. Cut into 1/4" slices. Add cabbage, salt, and pepper to pan. Mix well. Cook for 10 to 15 minutes, stirring frequently, until cabbage is cooked.
