Egg Roll in a Bowl
A friend asked me to make egg roll in a bowl for her. I made the recipe she gave me but it needed a little more color and a few more veggies. I changed up the recipe a couple of times and this is the final result.
Ingredients
1 pounds ground pork
3 cups shredded cabbage
1 small onion, chopped
1 red pepper, cut into thin strips
1 cup shredded carrots
1 cup bean sprouts
2 teaspoons minced garlic
2 teaspoons minced ginger
1/2 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons sesame oil
3 scallions, chopped
Directions
In a large saute pan, over medium heat, cook ground pork, breaking it up with a spoon, until browned and crumbled. Drain any fat.
Add cabbage, onion, red pepper,carrots, and bean sprouts. Stir and cook for 10 minutes. Add garlic and ginger. Stir and cook for 5 minutes.
In a small bowl, add soy sauce, rice vinegar, and sesame oil. Stir with a whisk. Add to suate pan. Mix well Cook for 5 minutes. Garnish with scallions.
