Easy Meatloaf
I make meatlaof at least twice a month and this is my go to recipe. I can prepare it in the morning and put it in the oven when we are ready for dinner. There are always leftovers for a meatloaf sandwich. If I make mashed potatoes to go with it I also make mushroom gravy.
Ingredients
1 egg
.7 ounce Italian dressing mix
1 tablespoon water
1 cup panko breadcrumbs
1 cup diced red pepper
1 cup diced sweet onion
1 1/4 pounds meatloaf mix
Directions
In a large bowl, add egg, Italian dressing mix and water. Mix well. Add breadcrumbs and stir until breadcrumbs are completely moistened. Let stand for 5 minutes.
Add pepper and onion to breadcrumb mixture. Mix well.
Add meatloaf mix to breadcrumb mixture. Mix with your hands until breadcrumbs are completely incorporated into meat.
Place meatloaf mixture into a loaf pan. Bake at 375 for 45 minutes.
