Dirty Rice
This is one of my friends favorite dish. For a while I think I was making it for him every other week. I wanted a family friendly recipe so this isn't a traditional Dirty Rice recipe.
Ingredients
1 tablespoon vegetable oil1 red pepper, cut into bite size pieces
1 green pepper, cut into bite size pieces
1 sweet onion, cut into bite size pieces
1 pound lean ground beef
14.5 ounces diced tomatoes
1 cup corn1 teaspoon seasoned salt1 teaspoon pepper1 teaspoon granulated garlic
2 teaspoons paprika
2 teaspoons chili powder
1 teaspoon cumin
1/4 teaspoon cayenne pepper
1 1/2 cups long grain rice
2 1/2 cups water
Directions
In a large sauce pan, over medium heat, heat oil. Add red peppers, green peppers and onions. Cook for 5 minutes.
Add ground beef and cook, breaking up with a spoon until browned and crumbled.
Add tomatoes, corn, salt, pepper, garlic, paprika, chili powder, cumin and cayenne pepper to ground beef. Reduce heat to medium low and cook for 5 minutes.
Add rice and water to ground beef. Mix well. Increase heat to medium high. Cook, covered, for 5 minutes. Reduce heat to medium low. Cook, covered, for 25 minutes.
