Black Bean Chili
I love chili but hate beans. I would pick around the beans just to eat the meat. One day the guys were coming over to play cards and they asked why I never make chili. The one bean I do like is black beans, so I created this recipe for them and so I could enjoy the whole bowl of chili.
Ingredients
1 large onion, chopped1 1/4 pounds ground beef
3/4 pound ground chorizo
31 ounces fire roasted diced tomatoes
1 1/2 teaspoons salt
1/2 teaspoon pepper
3 tablespoons chili powder
1 1/2 tablespoons ancho chili powder
1 teaspoon cumin
15 1/2 ounces black beans, rinsed and drained
Directions
In a large saucepan, over medium heat, add onion, ground beef and chorizo. Cook for 10 minutes, breaking meat up with a spoon, until meat is cooked and crumbled.
Add tomatoes, salt, pepper, chili powder, ancho chili powder and cumin. Mix well. Cook for 10 minutes.
Reduce heat to medium low and cook for 1 hour.
Add black beans to pan. Mix well. Cook for 1 hour.
Note: If you don't have ancho chili powder, substitute with 1 tablespoon chili powder.
