Beef Stew
Beef stew is a winter favorite. I have a few different beef stew recipes, but I like this one the best. With the seasonings, wine, beef broth, and veggies, there are many layers of flavor. After the stew simmers for hours, it makes the perfect dinner for a cold New England night. I always serve mine with biscuits for dipping into the gravy.
Ingredients
1 1/2 pounds lean stew beef, cut into bite size pieces
1 teaspoon seasoned salt
1 teaspoon ground black pepper
2 teaspoons garlic powder
1 1/2 teaspoons sweet paprika
1 teaspoon celery salt
4 tablespoons flour
2 tablespoons vegetable oil
3 cups beef broth
3/4 cup merlot
1 1/2 tablespoons Worcestershire sauce
3 russet potatoes, cut into bite size pieces
1 large sweet onion, cut into bite size pieces
5 stalks celery, cut into 1/2 inch slices
8 ounces carrots, cut into 1/2 inch slices
8 ounces sliced mushrooms
Instructions
In a large bowl, mix salt, pepper, garlic, paprika, celery salt, and flour. Add stew beef and mix until the beef is completely coated.
In a 5 quart saucepan, heat oil over medium high heat. Add stew beef and cook for 3 - 4 minutes. Reduce heat to medium and add beef broth, merlot, and Worcestershire sauce. Mix well and cook for 10 minutes.
Add potatoes, onions, celery, carrots, and mushrooms to pan. Mix well. Reduce heat to medium low, cover and cook for 2 hours.
