Beef and Bean Enchiladas
Enchiladas are great for lunch, dinner, and family parties. My stepchildren love it when I make enchiladas. I serve them with rice, corn, and sour cream and guacamole on the side.
Ingredients
1 tablespoon olive oil
1/2 onion, chopped
1 pound ground beef16 ounces refried beans
8 ounces black beans
1 cup corn1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons chili powder
1 teaspoon cumin
6 large flour tortillas
2 cups mexican blend cheese
enchilada sauce
Directions
In a large saute pan, over medium heat, heat oil. Add onions to pan. Cook for 5 minutes
Add ground beef to pan. Mix with onions. Cook for 5 minutes, breaking meat up with a spoon until it is crumbled and browned.
Add refried beans, black beans, corn, salt, pepper, chili powder and cumin to beef. Mix well. Reduce heat to medium low. Cook for 5 minutes. Remove from heat and let cool for 10 minutes.
Place 1/6 of the filling in the center of each tortilla in a straight line across the tortilla. Fold both sides in. Fold bottom up over filling so it looks like an envelope. Roll up the tortilla, keeping the sides tucked in.
Place enchiladas in a baking sheet. Cover with enchilada sauce. Sprinkle cheese over the top of the enchiladas. Bake at 350 for 25 minutes. Serve with sour cream.
