Barbecue Stuffed Manicotti
A friend made a smoked version of this recipe and it was delicious. I wanted to make this at home but I didn't want to use a smoker. In the winter, my barbecue recipes are cooked low and slow in my oven. I changed his recipe so it would have good flavor without the benefit of the smoky flavor.
Ingredients
1 pound ground Italian sausage
1 pound ground beef, 80/20
3 tablespoons brown sugar bourbon seasoning blend
1 teaspoon salt
1 pound manicotti, 14 pieces
18 ounces bourbon barbecue sauce
1 pound bacon, 14 slices
Directions
Place Italian sausage and ground beef in a large bowl. Add bourbon seasoning and salt. Mix until seasonings and meat are completely combined.
Fill each uncooked manicotti with meat mixture.
Pour barbecue sauce into a shallow dish, such as a pie plate. Roll each manicotti in barbecue sauce, the wrap a slice of bacon around the manicotti. Place on a baking sheet.
Bake at 275 degrees for 90 minutes.
