American Chop Suey
My Mom would make American Chop Suey often when I was growing up. It was one of my favorites, but it didn't have any vegetables. Since I like to add vegetable to many of my one-dish meals, I was inspired by her recipe to develop my own recipe. The only difference is the addition of peppers and onions.
Ingredients
8 ounces elbow macaroni, uncooked
1 tablespoon vegetable oil1 red pepper, cut into bite size pieces
1 green pepper, cut into bite size pieces
1 sweet onion, cut into bite size pieces
1 pound lean ground beef
28 ounces crushed tomatoes3 teaspoon salt1 teaspoon pepper1 teaspoon granulated garlic
1 tablespoon Italian herb mix
Directions
Cook macaroni according to package directions. Drain. Rinse with cold water. Set aside.
In a large sauce pan, over medium heat, heat oil. Add red peppers, green peppers and onions. Cook for 5 minutes.
Add ground beef and cook, breaking up with a spoon until browned and crumbled.
Add tomatoes, salt, pepper, garlic, and Italian herb mix to ground beef. Reduce heat to medium low and cook for 15 minutes.
Add macaroni to ground beef, mix until macaroni is complete coated. Cook for 15 minutes.
