Spicy Queso Dip
The first time I made this recipe, it was for a special family party where I wanted the appetizers to have a Mexican theme. I served the queso with lightly salted tortilla chips, guacamole, bean dip and salsa.
Ingredients
1 tablespoon butter1 tablespoon cornstarch12 ounces evaporated milk
8 ounces pepper jack cheese, shredded6 ounces american cheese, cut into small pieces
1 plum tomato, chopped
Directions
In a medium saucepan, melt butter over medium heat. Add cornstarch and cook for 1 minute.
Add evaporated milk and stir with a whisk until sauce starts to thicken.
Reduce heat to medium low. Add pepper jack cheese and american cheese. Mix well. Cook, stirring frequently, until cheese is melted. Serve with chopped tomato on top.
Serve with tortilla chips.
