Salsa and Black Bean Dip
One evening we had some last minute company come ove to play cards. I had to stay late at work so I didn't have time to shop so I had to rely on what was already in my refrigerato and pantry. This is one of the recipes I came up with for that night. This became a favorite for our weekly card nights.
Ingredients
16 ounces cream cheese
24 ounces salsa
15 1/2 ounces black beans, rinsed and drained
5 scallions, chopped
2 cups shredded monterey jack cheese
Directions
Spread cream cheese in the bottom of a round 9 x 13 baking dish.
Spread salsa on top of cream cheese. Sprinkle black beans on top of salsa. Sprinkle scallions on top of black beans. Sprinkle cheese on top of scallions.
Bake at 375 for 30 minutes.
Serve with tortilla chips.
