Roasted Red Pepper Hummus
Up until a week before writing and testing this recipe, I hated hummus. I tried some hummus from a friend and I loved it. It had a much smoother consistency than the hummus I had previously tried. I blended this until it had that same smooth and silky consistency.
Ingredients
30 ounces canned chickpeas, rinsed and drained
12 ounces roasted red peppers, cut into pieces
3 tablespoons tahini
3 tablespoons lemon juice
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground cumin
Directions
Place all of the ingredients in a blender. Blend for 30 - 40 seconds, or until hummus has a smooth and creamy consistency.
Serve with pita chips.
