Mushroom Pate
I needed to bring a couple of light appetizers to my sister's house for dinner and I had a large package of sliced mushrooms in the refrigerator, so I wanted to use them for the appetizer. Since they were sliced, I couldn't make stuffed mushrroms. I did want to keep it light and flavorful, so I created this pate recipe. The house smelled so good while it was cooking and it tasted just as good.
Ingredients
2 tablespoons olive oil
20 ounces sliced mushrooms
1/2 small onion, minced
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon granulated garlic
1 teaspoon poultry seasoning
1/4 cup dry white wine
2 tablespoons mayonnaise
1 tablespoon parsley
Directions
Heat oil in a large saute pan over medium heat. Add mushrooms, onions, salt, pepper, garlic, and poultry seasoning. Cook for 20 minutes, stirring occasionally.
Add wine and stir. Cook for 10 - 15 minutes, stirring occasionally, or until wine is completely absorbed into mushrooms. Set aside to cool.
Place mushroom mixture in a food processor. Add mayonnaise. Pulse 15 to 20 times or until it has a smooth consistency. Refrigerate for 1 hour.
Serve with crackers.
