Mexican Layer Dip
This is paired down version of the classic 7 layer dip. I chose the layers so it woul be enjoyed by everyone at my parties. You can certainly use only the layers that you and your guests enjoy.
Ingredients
16 ounces refried beans
16 ounces sour cream
1 packet taco seasoning
3 plum tomatoes
5 scallions, chopped
2 cups shredded cheddar cheese
Directions
In a small bowl mix refried beans with 2 tablespoons of the sour cream. Spread refried bean mixture in the bottom of a round 9 or 10 inch dish.
In a small bowl mix sour cream with taco seasoning. Spread sour cream mixture on top of refried beans.
Scoop insides out of the plum tomatoes and discard. Chop tomatoes into 1/4 inch pieces. Place chopped tomatoes on top of sour cream.
Place scallions on top of chopped tomatoes. Sprinkle cheese on top of scallions. Serve with tortilla chips.
Note: You can add a layer of sliced black olives. I am not a fan of olives so they aren't a part of the recipe when I make it. You can also add a layer of guacamole.
