Chicken Pesto Spread
I truly don't remember when I came up with this recipe. I think it was at a time where I had leftover chicken to use and wanted to create something new. Some leftovers are great for creating new recipes, and chicken is one of them.
Ingredients
1 pound boneless, skinless chicken breast, cooked
8 ounces cream cheese
3 tablespoons pesto
3 tablespoons mayonnaise
2 plum tomatoes, chopped
Directions
Place chicken in a food processor. Pulse 10 - 15 times to chop chicken.
Place cream cheese, pesto, mayonnaise and tomatoes in food processor. Process for 30 seconds. Refrigerate for 1 hour.
Serve with crackers.
