Blue Cheese and Bacon Dip
I had leftover bacon and blue cheese from a party and I almost always have cream cheese in the refrigerator.. Some friends were coming over to play cards and I needed one more appetizer. I looked at what I had on hand and this seemed like a good combination so it was a new addition to my many blue cheese recipes.
Ingredients
16 ounces cream cheese
8 ounces crumbled blue cheese
8 strips bacon, cooked until crispy
1/2 cup mayonnaise
1/4 cup grated parmesan cheese
5 scallions, chopped
Directions
Let blue cheese and cream cheese come to room temperature.
Place cream cheese, blue cheese, bacon and mayonnaise in a large bowl. Mix well.
Place cream cheese mixture in a 1 1/2 quart baking dish. Sprinkle top with parmesan cheese and scallions.
Bake at 375 for 20 minutes.
Serve with crackers.
