Bacon and Spinach Dip
One of my favorite sandwiches in a pub I went to was Bacon, Onion, and Spinach. It wasn't on the menu but the owner would make it for me since she had all of the ingredients. While it sounds a little odd, it was very good. I was going to a party and was inspired by the sandwich ingredients to make this dip. Everyone loved it so this recipe was definitely a keeper.
Ingredients
12 ounces bacon9 ounces fresh baby spinach1 packet onion soup mix
16 ounces sour cream1/2 cup mayonnaise
Directions
Cook bacon until crisp. Place on paper towel and cool. Crumble bacon.
Reserve 1 tablespoon of the fat from bacon. Place in saute pan, over medium heat. Cook spinach for 2 minutes. Remove from heat and let cool.
In a large bowl, add onion soup mix, sour cream and mayonnaise. Mix well. Refrigerate for one hour.
Add bacon and spinach to sour cream mixture. Mix well. Refrigerate for one hour.
