Apple Pancake Cake
This recipe was inspired by my next door neighbor. He challenged me to 'cook' a cake for him. It couldn't be baked. I thought about it for a while a this is the recipe and cake I created. The recipe made 2 cakes, one for his family and one for mine.
Ingredients
8 apples, peeled, cored and cut into chunks
1/3 cup water
3 tablespoons sugar
pancake mix, depending on which you choose you may also need milk and eggs
16 ounces cream cheese
1/3 cup milk
1/3 cup maple syrup
1/2 chopped walnuts
Directions
Place apples, water, and sugar in a medium sauce pan. Bring to a boil. Reduce heat to medium low and cook covered for 30 minutes. Refrigerate for at least one hour.
Follow pancake mix package direction to make 8 large (7 - 8 inch) pancakes.
In a food processor, place cream cheese, milk and maple syrup. Pulse until smooth.
Assemble cakes: This will make two cakes, each using 4 pancakes. Place pancake on a serving dish.
Spread 1/8 of cream cheese mixture on pancake. Place 1/6 of applesauce on Cream cheese. Place a pancake on top of applesauce. Repeat this two more times. Spread 1/8 of cream cheese mixture on top pancake. Sprinkle with 1/4 cup of walnutes.
Follow assemble cake steps to make second cake, Refrigerate until serving time.
