Spinach Squares
I got this recipe from a friend of mine who would make this for parties at work. I made minor changes to the recipe to suit another friend's dietary needs. Spinach squares are also good for breakfast and I have made this recipe many times for brunch.
Ingredients
3 eggs
1 cup flour1 cup milk1 teaspoon salt1/2 teaspoon pepper
1 small onion, diced small
2 (10 ounce) packages frozen chopped spinach, thawed2 cups shredded cheddar cheese
1/2 cup grated parmesan cheese
Directions
In a large bowl, beat eggs. Add flour, milk, salt, pepper, and onions. Mix until it forms into a dough.
Squeeze water out of spinach. Add spinach to bowl. Mix well. Add cheese. Mix well.
Place mixture in a 13 x 9 baking dish. Bake at 375 for 35 minutes or until an inserted toothpick comes out clean.
