Sausage Squares
This is a great brunch recipe which I made for a couple of baby shower brunches. It is the prefect recipe for a brunch because you can make it ahead of time, it is easy to serve, and it is a party favorite.
Ingredients
1 pound fresh ground breakfast sausage
1 small onion, diced
6 eggs2 cups milk
3 cups pancake and baking mix1 teaspoon salt1/2 teaspoon pepper2 cups shredded monterey jack cheese
Directions
In a frying pan, over medium heat, cook sausage and onions. Cook for 5 minutes, stirring occasionally, until onions are translucent. Break up sausage with a spoon until meat is browned and finely crumbled. Drain and set aside to cool.
In a large bowl, beat eggs. Add milk, baking mix, salt, and pepper. Mix until it forms into a dough.
Add sausage, onions, and cheese. Mix well. Add cheese. Mix well.
Place mixture in a 13 x 9 baking dish. Bake at 375 for 40 minutes or until an inserted toothpick comes out clean.
