Sausage and Veggie Frittata
This is great for breakfast, lunch, and dinner. It is packed with lots of veggies and protein, and is so tasty, you don't even miss the carbs.
Ingredients
8 large eggs1/4 cup milk1/4 teaspoon seasoned salt
1/4 teaspoon pepper
1 tablespoon olive oil7 1/2 ounces chicken breakfast sausage, cut into1/2 inch slices
1 red pepper, chopped
1 small onion, chopped
6 ounces baby spinach, steamed
1/2 cup shredded american cheese
Directions
Break eggs into a large bowl. Add milk, salt, and pepper. Wisk until eggs they are smooth.
In a 12 inchoven safe skillet, over medium heat, heat olive oil. Add sausage, peppers, and onions. Coook for 10 - 15 minutes, stirring occasionally. Add spinach to skillet. Mix well.
Add cheese to eggs. Add eggs to skillet. Gently mix.
Bake in a 375 degree oven for 30 - 35 minutes or until you can insert a toothpick and it comes out clean..
