Hash Brown Potatoes
Hash brown potatoes are a breakfast staple. They are the best addition to bacon and eggs. I would help a friend when she would serve brunch in her pub. The hash brown potatoes were always the first thing to go.
Ingredients
3 pounds russet potatoes, peeled and cut into bite size pieces
3 tablespoons vegetable oil1 sweet onion, chopped
1 red pepper, chopped
1 green pepper, chopped3 teaspoons granulated garlic3 teaspoons seasoned salt2 teaspoon pepper
1 1/2 teaspoons celery salt
1 1/2 tablespoons sweet paprika
Directions
Place potatoes in 5 quart sauce pan, cover with water and bring to a boil. Reduce heat to medium high and boil for 10 minutes. Drain and set aside.
In a large frying pan, over medium high heat, heat oil. Add onion, red pepper, and green pepper. Cook, stirring frequently, for 5 minutes. Add cooked potatoes, garlic, salt, pepper, celery salt, and paprika to pan. Mix well. Cook, stirring frequently for 15 minutes, until potatoes are crispy and fork tender.
