Asparagus Frittata
Ingredients
1 pound fresh asparagus
1 tablespoon olive oil
8 large eggs1/4 cup milk1/4 teaspoon seasoned salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese
Directions
Cut asparagus into 1/2 inch pieces. In a large saute pan, over mediumheat, heat olive oil. Add asparagus to pan. Cook for 10 minutes
Break eggs into a large bowl. Add milk, salt, and pepper. Wisk until eggs they are smooth.
Add asparagus and cheese to eggs. Mix until asparagus and cheese are combine with eggs.
Place eggs in a 12 inch oven safe skillet. Bake in a 375 degree oven for 30 - 35 minutes or until you can insert a toothpick and it comes out clean.
