Vegetable Egg Rolls
In my house, eggrolls are a favorite. When we order Chinese food, we always order extra. One day I decided to try making my own eggrolls. I was surprised at how easy they are to make and it was nice to expand my collection of Chinese favorites.
Ingredients
1 tablespoon vegetable oil
6 ounces broccoli slaw
2 ounces bean sprouts
2 ounces shredded carrots16 eggroll wrappers
oil for frying
Directions
In a saute pan, over medium high heat, add broccoli slaw, bean sprouts, and carrots. Cook for 2 minutes stirring frequently. Remove from heat and let cool for 15 minutes.
Deep fry or pan fry for 5 minutes, or until golden brown. Serve with duck sauce or sweet and sour sauce.
