Tomato Parmesan Crostini
Crostini is one of my favorite appetizers. There are times when I will have leftover crostini for breakfast which isn't really much different than having pizza for breakfast. I usually use campari tomatoes since they have such a great flavor, but plum tomatoes work just as well.
Ingredients
1 french baguette1/2 cup olive oil2 teaspoons minced garlic2 teaspoons Italian seasoning32 slices plum or campari tomatoes1 cup shredded Italian cheese blend
Directions
Slice bread into 16 slices. Slice at an angle, into 1/2 inch slices and place on a baking sheet.
In a small bowl add olive oil, garlic, and Italian seasoning. Mix well. Brush each slice of bread with olive oil mixture. Bale at 375 for 5 minutes.
Place 2 slices of tomato onto each slice of bread. Sprinkle cheese on top.
Bake at 375 degrees for 8 minutes.
