Sweet Pepper Rollups
Many years ago, when I first started working after college, for parties, one of my colleagues would bring in cream cheese, pour sweet pepper relish on top, and serve it with crackers. I took that idea a couple of steps further by mixing the relish and cream cheese together and making rollups with the flour tortillas. Any way you serve it, the sweet pepper relish and cream cheese are a wonderful combination.
Ingredients
16 ounces cream cheese
11 ounces sweet pepper relish
4 large flour tortillas
Directions
Let cream cheese come to room temperature.
Place cream cheese and sweet pepper relish in a large bowl. Mix well until pepper relish is completely combined with cream cheese.
Spread 1/4 of the mixture on each flour tortilla to 1/2 inch from the edge. Roll up each flour tortilla. Refrigerate for at least 2 hours.
Cut tortillas into 3/4 inch slices.
