Stuffed Mushrooms
This is another of my favorite stuffed mushroom recipes. It is a lighter version of my Ritzy Stuffed Mushroom recipe, but still has many of the same great flavors.
Ingredients
4 tablespoons butter
4 garlic cloves, finely chopped
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped red pepper
1/2 cup chopped pepperoni
1/2 cup dry white wine
1 1/4 cups bread crumbs
1/2 cup grated Parmesan cheese
2 pounds white mushrooms
Directions
In a large saute pan, over medium heat, melt butter. Add garlic, celery, onions, red pepper and pepperoni to pan. Cook for 5 minutes, stirring frquently. Add wine and cook for 2 minutes. Remove pan from heat.
Add bread crumd crumbs to pan and mix until bread crumbs are no longer dry. Add a little water if needed. Add parmesan cheese and mix well. Allow to cool for 10 minutes.
Remove stems from the mushrooms. Fill the mushrooms caps with the stuffing. Bake at 400 for 15 minutes.
