Stuffed Clams
Stuffed clams are a New England favorite. Many restaurants have them on their appetizer menu. Everyone makes them a different way. Some are spicy, some are loaded with clams, and some are mostly bread flovored with clam juice. My recipe is a little spicy, with lots of clams and chorizo.
Ingredients
4 tablespoons butter
1 cup diced onion1 cup diced red pepper
1 cup diced celery
3/4 pound ground chorizo1 pound chopped sea clams
16 ounces clam juice
14 ounces herb seasoned stuffing mix
12 quahog shells
Directions
In a large saucepan, melt butter over medium heat. Add onion, red pepper, and celery. Cook for 5 minutes. Add chorizo to pan. Cook for 5 - 10 minutes, breaking it up with a spoon, until chorizo is cooked and crumbled.
Add sea clams and clam juice. Mix well. Cook for 10 minutes.
Add stuffing mix and mix until all of the liquid is absorbed into the bread. Add additional water if stuffing mixture is dry. Let stand, covered, for 20 minutes.
Shape stuffing mixture into 12 patties. Stuff each pattie into a quahog shell. Bake at 375 for 20 minutes.
Note: If you don't have quahog shells, you can place patties onto a baking sheet and bake at 375 for 20 minutes.
