Stuffed Artichoke Hearts
An old gentleman, who was a regular at a pub I go to, asked me if I could make stuffed artichoke hearts for him. A week later I brought two dozen for him so he would have enough to share with his friends. They were a huge hit. In return he brought me some of his homemade stuffed cherry peppers. They were wonderful.
Ingredients
12 whole artichoke hearts, use canned artichoke hearts1 sleeve round butter crackers1/2 stick butter1 teaspoon granulated garlic
1/2 cup dry sherry1/2 teaspoon salt1/4 teaspoon pepper1/3 cup grated parmesan cheese
Directions
Crush crackers. Melt butter over medium heat in a small sauce pan. Add garlic, salt, pepper and wine. Cook for 2 minutes. Remove from heat. Add crackers and stir until crackers are moist. Add parmesan cheese and stir.
Fill artichoke hearts with cracker stuffing. Bake at 425 for 15 minutes.
