Steamed Mussels
When my husband went to the fish market he surprised me with a pound of mussels. I don't eat mussels very often so I needed to make something very tasty that would complement the delicate taste of the mussels and used crusty bread to dip in the broth.
Ingredients
2 tablespoons butter
1 tablespoon olive oil
1 small onion, chopped
1/4 cup pepperoni, chopped
2 teaspoons minced garlic
3/4 cup dry sherry
1 pounds mussels, beards removed
Directions
In a large saute pan, over medium high heat, add butter and olive oil. Once butter is melted, add onions, pepperoni, and garlic to pan. Cook for 5 minutes.
Add sherry to pan. Cook for 3 minutes.
Increase heat to medium high. Add mussels to pan. Cook covered for 8 to 10 minutes. Discard any mussels that don't open. Serve with crusty bread.
