Spinach Stuffed Mushrooms
This recipe was created for a contest I was entering. One of the requirements of the contest was that the recipe had to include wine and cheese. Since I love wine, this was easy and it paired very well with the spinach and blue cheese, which I also love. I didn't win the contest but it was fun to try.
Ingredients
16 ounces sliced mushrooms
1/4 teaspoon seasoned salt
2 teaspoon minced garlic
1/4 teaspoon ground black pepper
1/2 cup Chardonnay wine
6 ounces baby spinach
1 teaspoon granulated garlic
3/4 cup crumbled blue cheese
16 -20 mushroom caps, stems removed
6 tablespoon panko bread crumbs
3 tablespoon grated Parmesan cheese
Directions
In a large saute pan, over medium heat, cook mushrooms, salt, minced garlic, black pepper an Chardonnay wine for 10 - 15 minutes or until liquid is gone. Place cooked mushrooms in a blender and blend until smooth. Place mushroom mixture in a medium bowl.
In a large saute pan, over medium heat cook baby spinach and granulated garlic for 3 - 4 minutes. Add spinach to mushroom mixture. Gently stir spinach into mushroom mixture.
To finish making the stuffing for the mushrooms, add the blue cheese and panko bread crumbs to spinach and mushroom mixture and gently stir.
Fill the mushrooms caps with the stuffing. Sprinkle the Parmesan cheese over the mushrooms. Bake at 400 for 15 minutes.
