Spinach and Mozzarella Stuffed Tomatoes
This recipe is loaded with fresh ingredients and is a great appetizer to serve in the summer. The campari tomatoes have wonderful flavor and the balsamic has the right combination of sweetness and acidity to tie all of the ingredients together.
Ingredients
12 campari tomatoes8 ounces unwrap and roll mozzarella cheese4 ounces baby spinach leaves
balsamic glaze
Directions
Cut tops off tomatoes and scopp out the insides. Place in a baking dish.
Unroll mozzarella and cut into 12 equal pieces. Place 3 or 4 spinach leaves at the end of each piece of mozzarella and rollup. Place one roll in each tomato.
Bake at 400 for 10 minutes. Drizzle with balsamic glaze before serving.
