Spinach and Bacon Rollups
I make many varieties of rollups and this is one of my favorites. The combination of spinach and bacon is sogood. This is a little salty and crunchy from the bacon and colorful from the spinach. I created this recipe when a friend asked me to make the appetizers for a special birthday party.
Ingredients
16 ounces cream cheese
12 ounces bacon
4 1/2 ounces baby spinach
4 large flour tortillas
Directions
Let cream cheese come to room temperature.
Cook bacon until crispy. Drain and cool. Chop bacon. Chop Spinach.
Place cream cheese, bacon, and spinach in a large bowl. Mix well until ingredients are completely combined with cream cheese.
Spread 1/4 of the mixture on each flour tortilla to 1/2 inch from the edge. Roll up each flour tortilla. Refrigerate for at least 2 hours.
Cut tortillas into 3/4 inch slices.
