ShrimpStuffed Mushrooms
I created this recipe on New Year's Day. I had already planned on making stuffed mushrooms, and I had some extra shrimp, so I figured they would be a good addition to the stuffing.
Ingredients
8 tablespoons butter
2 garlic cloves, finely minced
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup dry white wine
1 1/4 cups seasoned bread crumbs
1/2 pound chopped shrimp
2 pounds white mushrooms
Directions
In a large saute pan, over medium heat, melt butter. Add garlic, celery, onions to pan. Cook for 5 minutes, stirring frquently. Add wine and cook for 2 minutes. Remove pan from heat.
Add bread crumd crumbs to pan and mix until bread crumbs are no longer dry. Add a little water if needed. Add shrimp and mix well. Allow to cool for 10 minutes.
Remove stems from the mushrooms. Fill the mushrooms caps with the stuffing. Bake at 400 for 15 minutes.
