Seafood Stuffed Cubanelle Peppers
I use seafood mixed with cream cheese in many of my recipes and I love cubanelle peppers. I thought they would make a good combination, so I developed this recipe and it turned out to be great.
Ingredients
8 cubanelle peppers8 ounces cream cheese
8 ounces imitation crabmeat, chopped1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon granulated garlic
1/2 cup seasoned breadcrumbs
Directions
Cut tops off peppers, cut in half legthwise, and remove seeds.
Let cream cheese come to room temperature. Place cream cheese in a bowl. Add crabmeat, salt, pepper, and garlic to cream cheese. Mix well.
Fill peppers with cream cheese mixture.
Top each pepper with breadcrumbs. Bake at 375 for 12 - 15 minutes.
