Ritzy Stuffed Mushrooms
This is the first stuffed mushroom recipe I made. I can't even begin to guess how many times I have made this recipe. It is definitely a family favorite and one of my most requested recipes.
Ingredients
8 tablespoons butter
2 teaspoons minced garlic
chopped mushroom stems
1 cup chopped celery
1 cup chopped onion
3/4 cup chopped pepperoni
1/2 cup dry white wine
2 sleeves round butter crackers, crushed
1/2 cup grated Parmesan cheese
24 large stuffing mushrooms
Directions
In a large saute pan, over medium heat, melt butter. Add garlic, mushroom stems, celery, onions, and pepperoni to pan. Cook for 5 minutes, stirring frequently. Add wine and cook for 2 minutes. Remove pan from heat.
Add crackers to pan and mix until crackers are no longer dry. Add parmesan cheese and mix well. Allow to cool for 10 minutes.
Fill the mushrooms caps with the stuffing. Bake at 375 for 20 minutes.
