Pork and Broccoli Egg Rolls
I was in the supermarket, saw the eggroll wrappers, and decided to make eggrolls. I wanted something a little differnet from the classic eggroll. Brocolli slaw was right there so that would be great for the vegetable. I was going to choose either shrimp or pork for the protein. Found thin sliced lean pork, so that was it. Another market inspired recipe.
Ingredients
8 ounces lean pork, cut into very small pieces
3/4 cup sesame ginger salad dressing6 ounces broccoli slaw16 eggroll wrappers
oil for frying
Directions
In a bowl add pork and sesame ginger salad dressing. Mix well. Refrigerate for one hour.
In a saute pan, over medium high heat, add pork with 2 tablespoons of the dressing. Cook for 2 minutes, stirring frequently. Add broccoli slaw. Cook for 2 minutes stirring frequently. Remove from heat and let cool for 15 minutes.
Deep fry or pan fry for 5 minutes, or until golden brown. Serve with duck sauce or sweet and sour sauce.
